Custom Coffees began in 2001 as Grata Gourmet Coffees, founded to fill a gap in the regional market where cafés had little choice beyond the large national roasters. We were the first specialty coffee roaster based outside Melbourne — pioneering artisanal coffee in regional Victoria at a time when the craft was still finding its place.

From a modest shop in Bendigo's CBD, our commitment to high-quality, small-batch wholesale roasting quickly built a loyal following. As demand grew across cafés, restaurants, and discerning home brewers, we rebranded to Custom Coffees to reflect our broader purpose: crafting blends tailored to the people who serve them.

To match our growth and continue delivering the consistency our customers expect, we moved to a purpose-built roastery in Mayfair Park Estate, East Bendigo. The move mirrored a wider cultural shift — coffee maturing from a daily ritual into a craft worthy of the same care given to wine or whisky.

Twenty-five years on, we still roast every bean ourselves in Bendigo. We still answer the phone when customers call. And we still believe that the best coffee is made by people who genuinely care about getting it right — every batch, every order, every cup.
